Satay Skewers with Peanut Sauce

- 500 grams Beef (Filet or sirloin)
- Wooden skewer
- 1 walnut sized pc Galangal
- 1 sprig fresh Lemongrass
- 1 tsp Coriander
- 1 tsp ground cumin
- ½ tsp salt
- freshly ground peppers
- 2 Tbsps sugar
- 1 Tbsp Curry powder
- 2 Tbsps Peanut oil
- Peanut sauce
- 150 grams shelled, unsalted Peanuts
- 2 Tbsps Peanut butter
- 1 tsp Curry
- 1 red chili pepper (chopped)
- 1 shallot (chopped)
- 2 Tbsps Peanut oil
- 1 lemon (juice and zest)
- salt
- cayenne pepper
- 1 can Coconut milk (about 200 ml)
- 100 milliliters Chicken broth
Preparation steps
Step 1
Cut the beef into 3 cm (1 inch) cubes.
Soak the wooden skewers in water so that they don't burn on the grill.
Peel and chop the galangal. Rinse the lemon grass and cut into thin slices. Crush the coriander seeds and cumin seeds in a mortar. Mix the salt, pepper, 2 tablespoons sugar, curry powder and 3 tablespoons of the thick top layer of coconut milk from the can add to the meat cubes, toss and marinate in the refrigerator, covered for 1 hour.
Step 2
Toast peanuts in a dry skillet, remove and let cool.
Sauté the shallots and chile pepper in hot oil. Mix the roasted peanuts, peanut butter, curry paste, lemon juice and rind, coconut milk and chicken broth and add to the skillet.
Step 3
Simmer the peanut sauce for about 10 minutes on low heat until thickened. Season with salt and cayenne pepper.
Step 4
Thread the meat cubes on the soaked wooden skewers.
Step 5
Cook the skewers on a grill or in hot oil ion a grill pan on all sides about 8 minutes, until browned. Serve with the peanut sauce.
