30 grams blanched almonds
150 milliliters olive oil
2 Tbsps grated Parmesan
1 Tbsp Goat cheese

1 tsp lemon juice
2 small Zucchini
2 Chicken breasts (each about 140 grams)
1 tsp dried oregano
4 Ciabatta

Preparation steps

Rinse the basil, shake dry and process with the almonds. Gradually pour in up to 100 ml (approximately 1/2 cup) olive oil and process until mixture is creamy. Mix in the Parmesan and goat cheese. Season the pesto with salt, pepper and lemon juice.

Preheat the grill.

Rinse the zucchini, remove the ends and cut into thin slices. Rinse the chicken and pat dry. Mix together the rest of the oil with salt, pepper and oregano and brush on the zucchini and chicken. Cook the zucchini on the grill while turning 5-6 minutes. Grill the chicken for 3-4 minutes on each side. Then let the chicken rest briefly, then cut into thin slices.

Cut the rolls lengthwise and place cut sides down on the grill. Cook 1-2 minutes until light brown. Then brush the zucchini and chicken strips each with little pesto.

Serve the sandwiches with the remaining pesto.
