Ingredients

cooked, boneless, skinless Chicken breasts (cooled and diced)
6 tablespoons
good-quality Mayonnaise (plus extra for bread)
2 stalks
Celery (rinsed; trimmed and finely chopped)
1 tablespoon
fresh Tarragon Leaf (finely chopped)
salt (to taste)
freshly ground Black pepper (to taste)
8 slices
Whole-wheat bread (toasted or grilled)

large, ripe tomato (sliced)

Preparation steps

In a large bowl, combine chicken, mayonnaise, celery, tarragon, season with salt and pepper and toss well to blend.

To assemble, spread a little mayonnaise on half of the toasted bread slices, top with lettuce leaves, sliced tomato and chicken salad, and cover with the remaining slices of toasted bread. Arrange on luncheon plates and serve.
