Chicken Salad Sandwich

- 3 Chicken breasts (each 120 grams)
- 500 milliliters Chicken broth
- 1 stalk Celery
- ½ Red onion
- 4 Lettuce (such as Lollo Biondo)
- 2 Tbsps Mayonnaise
- 60 Greek Yogurt (0.1% fat)
- ½ Apple
- 1 tsp lemon juice
- salt
- peppers
- 4 Ciabatta (such as with fried onions)
Preparation steps
Rinse chicken breasts and pat dry with paper towel. Bring chicken broth to a boil in a pot. Add chicken, bring to a boil again, cover and simmer over low heat for about 10 minutes until done. Then remove from the heat and allow to cool in the broth. Rinse celery and cut into thin slices. Peel onion and slice finely. Rinse lettuce and shake dry.
Mix mayonnaise in a bowl with yogurt. Drain chicken breasts, cut into small cubes, add to the bowl and mix. Peel apple and grate with a vegetable grater. Add apple, celery and onion to the bowl, mix and season with lemon juice, salt and pepper. Cut ciabatta roll horizontally, cover the bottom half of roll with lettuce and chicken salad. Cover with top half of ciabatta roll and serve. If desired, wrap in wax paper and store in the refrigerator as a snack.
