Chicken Pilaf with Raisins and Noodles
Ingredients
- Ingredients
- 4 Chicken breasts (each about 120 grams)
- 3 Tbsps olive oil
- 250 grams Long grain rice
- 500 milliliters Chicken broth
- 100 grams raisins
- 1 bay leaf
- salt
- freshly ground peppers
- 100 grams soup noodles
- 2 onions
- 20 grams slivered almonds
- lemon juice
- 1 pinch Ground cinnamon
- 1 pinch allspice
Preparation steps
Rinse the chicken breasts, pat dry and cut into strips. Heat 1-2 tablespoons oil in a saucepan, add the chicken and saute briefly. Stir in the rice, broth, raisins, bay leaf and salt and pepper to taste. Bring to a boil, reduce to a simmer, cover and cook, stirring occasionally until the rice is tender, about 20 minutes.
Cook the noodles in a pot of boiling salted water according to package directions. Drain well.
Peel the onions, halve and cut into strips. Heat the remaining oil in a skillet and saute the onions until golden brown, about 5 minutes. Add the noodles and almonds to the pan and cook 1-2 minutes longer. Season with salt and pepper.
Remove the bay leaf from the rice and season with lemon juice, cinnamon, allspice, salt and pepper. Transfer to plates and serve topped with the onions.
