- 32 ozs bone-in, cut-up chicken
- salt (to taste)
- 1 Tbsp Oil
- 1 onion (peeled and diced)
- 2 cloves garlic cloves (peeled and minced)
- 2 stalks Celery (rinsed and chopped)
- 1 Zucchini (rinsed and sliced)
- 1 Tbsp fresh ginger (peeled and grated)
- ½ tsp paprika
- ¾ tsp ground Cumin
- ½ tsp cinnamon
- ¼ tsp ground Turmeric
- ¼ tsp ground cayenne pepper
- ½ tsp oregano
- 1 ½ cups Chicken broth
- 2 cups crushed, canned Tomatoes
- 2 fresh lemons (peeled; cut into wedges and seeds removed)

Preparation steps
1.
Rinse chicken under cold running water and pat completely dry with paper towels. Season to taste with salt.

Heat oil in a deep saute pan or skillet over medium-high heat. Add onion, garlic, celery and chicken pieces. Cook chicken for 3 to 4 minutes on each side or until browned.

Add zucchini, ginger, paprika, cumin, cinnamon, turmeric, cayenne pepper, oregano, chicken broth, tomatoes, and lemon wedges. Bring to a boil, reduce heat to low and simmer for about 15 to 20 minutes, or until chicken is cooked through and vegetables are tender.
4.
Adjust seasoning if desired. Ladle into bowls and serve hot.
