Chicken in Bread Dough

Heat the oven to 180°C (160°C in a fan oven), 375°F, gas 5 and line a baking tray with grease-proof paper.
For the dough crust, mix the flour with 50 g salt and approx 1/2 l warm water to form a smooth dough.
Heat the oil in a pan and fry the onions for 2-3 minutes until translucent. Mix through the olives and garlic, fry together briefly and remove from the heat. Season with ground black pepper and add the breadcrumbs and thyme leaves. Stuff the mixture into the chicken.
Roll the dough out on a lightly floured work surface to just 1/2 cm thick. Place the chicken on the dough and wrap this around the chicken. Seal well all round and place on the baking tray. Bake in the oven on the second shelf from the bottom for 1-1 1/2 hours.
