- For the curry
- 4 Chicken breasts
- 2 sprigs fresh Lemon balm
- 4 Tbsps Lime juice
- 1 tsp ground Cumin
- ½ tsp ground cilantro
- ¼ tsp ground Turmeric
- 125 milliliters Chicken broth (Instant)
- 3 Tbsps olive oil
- ½ tsp cornstarch
- salt
- freshly ground peppers
- To garnish
- Lemon balm (and lime wedges)

Preparation steps
1.
Dry the chicken breasts with paper towels. Cut into 2 cm (approximately 3/4 inch) cubes.

Rinse the lemon, shake dry and chop finely. Mix lime juice with mint, spices and chicken broth. Add the chicken cubes, mix well and marinate for about 5 hours in the refrigerator.

Lift the meat cubes from the marinade and drain. In a pan, heat the oil and cook meat cubes for 4-5 minutes over medium heat. Pour in the marinade and bring to a boil.

Mix cornstarch with 1 tablespoon of water and stir into the sauce. Bring to a boil and cook until thickened.
5.
Season with salt and pepper. Garnish with lemon balm and lime wedges. Serve with rice, if desired.
