1 chicken
2 onions
2 scallions
2 garlic cloves
2 tsps freshly chopped ginger
3 Tbsps Ghee
½ tsp ground chili peppers
½ tsp ground Turmeric
½ tsp ground cilantro
½ tsp ground Cumin
½ tsp Garam Masala
400 milliliters Chicken broth
salt
freshly ground freshly ground pepper
100 milliliters unsweetened Coconut milk
2 Tbsps lemon juice

Preparation steps

1.

Wash the chicken, pat dry, debone the chicken, remove skin, and cut bite-size pieces.

2.

Peel the onions and garlic and chop finely. 

3.

Heat ghee in a saucepan, add the onions and sauté about 3 minutes. Add chicken, garlic and ginger. Stir to combine. Add spices and garam masala and sauté briefly. Add chicken broth, salt and pepper and simmer over low heat for about 20 minutes. 

4.

Add coconut milk and simmer for about 5 more minutes. Add lemon juice and season with more salt and pepper if desired.

5.

Wash spring onions, drain and cut the whites into rings. Sprinkle over the chicken stew and serve.
