250 grams Couscous (Instant)
salt
50 grams fresh lingonberry
250 grams Mushrooms (such as chestnuts or chanterelles)
1 ripe Mango
2 Chicken breasts (each about 200 grams)
freshly ground peppers
4 Tbsps vegetable oil
125 milliliters dry white wine
150 milliliters Whipped cream

Preparation steps

Place couscous in a bowl. Bring about 300 ml (approximately 1 1/4 cup) of water with salt to a boil, pour over couscous and let stand for 3 minutes, loosen with a fork. Rinse lingonberries, pat dry and add to couscous, setting 1 handful aside for garnishing. Clean mushrooms. Peel mango and pit, cut into thin wedges. Rinse chicken breasts, pat dry and cut into strips, season with salt and pepper. Heat 2 tablespoons of oil in a pan and cook chicken for about 7 minutes. Remove from the pan. Heat remaining oil in the same pan and saute mushrooms for about 7 minutes. Add white wine and cream. Return chicken to the pan and heat through, season with salt and pepper.

Arrange couscous on plates, top with chicken and mushrooms and garnish with mango slices and lingonberries. Serve.
