2 Chicken breasts (each 140 grams)
4 Lettuce (such as Romaine lettuce)
1 egg
1 Tbsp freshly chopped parsley
2 Tbsps breadcrumbs
salt
freshly ground peppers
1 Tbsp vegetable oil
4 Tbsps Mayonnaise
1 tsp Tomato paste
1 generous pinch Chili powder
1 Focaccia (about 30 x 10 cm)
2 Tbsps olive oil

Preparation steps

Rinse the chicken breasts, pat dry and grind or chop very finely. Mix with egg and parsley and enough breadcrumbs to make a well-moldable dough. Season with salt and pepper. Shape into 4 patties and fry in a non-stick pan in hot oil until golden brown on both sides, 5-6 minutes.

Whisk mayonnaise with the tomato paste and chilli powder in a small bowl until smooth.

Halve the focaccia horizontally. Heat oil in a grill pan and fry the bread halves in the pan. Remove and divide each into 4 equal pieces. Top half with the lettuce leaves and the chicken patties. Top each patty with 1 tablespoon tomato mayonnaise, cover with remaining focaccia pieces and fasten with toothpicks.
