2 Chicken breasts (each 150 grams)
2 sprigs Basil
4 strips Bacon
2 Tomatoes
½ Avocado
50 grams Pastry flour
2 eggs
100 grams breadcrumbs
salt

4 Tbsps butter
4 Hamburger bun

Preparation steps

1.

Rinse chicken breasts, pat dry with paper towels and halve diagonally. Hit with meat tenderizer. Rinse basil, shake dry and cut leaves into small pieces. Fry bacon in dry pan on both sides until crisp.

Rinse tomatoes and cut into slices. Halve and seed avocado, separate flesh from peel and cut flesh into slices.

Put flour in bowl. Beat eggs with 2 tablespoons water in deep dish. Fill bread crumbs and basil in separate deep dish.

4.

Season chicken breasts with salt and pepper. First coat chicken with flour, then pass through beaten egg and coat in breadcrumbs. Press firmly on breading.

5.

Heat butter in large skillet and cook breaded chicken for 10-15 minutes, turning occasionally.

6.

Cut bread horizontally and top with tomato slices, chicken breast, bacon and avocado. Garnish with basil.
