- 1 Tbsp olive oil
- 1 small onion (peeled and chopped)
- ½ red Bell pepper (rinsed; seeded and finely chopped)
- 2 cloves garlic cloves (peeled and minced)
- 16 ozs ground chicken
- 1 fresh egg (lightly beaten)
- ⅓ cup breadcrumbs
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 sandwich Rolls (split)
- 1 ripe Tomato (washed and sliced)
- 1 ripe Avocado (sliced)
- Potato chip to serve (optional)

Preparation steps
1.
Preheat grill to medium-high heat and lightly oil grill grate.

Heat oil in a skillet set over medium heat. Saute onions, red peppers, and garlic until soft, about 5 to 6 minutes. Set aside to cool.

In a large bowl, combine ground chicken and cooled onion mixture. Add egg, bread crumbs, salt and pepper. Using clean hands, mix together well and shape into 4 patties.

Grill for 5 to 6 minutes per side, or to desired doneness. Place the split rolls, cut side down on the grill grate and lightly toast.
5.
Assemble burgers, top with tomato and avocado slices. Serve with potato chips, if desired.
