- For the skewers
- 400 grams Chicken breasts (cut into bite-size pieces)
- 250 grams shallots (halved, peeled)
- 250 grams Cherry tomatoes
- 150 grams Pineapple (cut into bite-size pieces)
- 200 grams Bacon (loosely rolled into slices)
- 1 red and 1 green Bell pepper (cut into bite-size pieces)
- For the marinade
- 1 shallot (finely chopped)
- 1 tsp sweet paprika
- 1 tsp mild Curry paste
- 1 tsp freshly grated ginger
- 2 pressed garlic cloves
- juice of lemons
- 2 Tbsps olive oil
- For the dipping sauce
- 4 Tbsps Peanut butter
- 3 Tbsps Mango chutney
- 1 tsp mild Curry paste
- 2 Tbsps olive oil

Preparation steps
1.
For the marinade, mix all ingredients together, add the chicken pieces and marinate for about 3 hours, refrigerated. Mix occasionally.

For the skewers, place marinated chicken, tomato, pineapple, bell peppers, rolled bacon slices and shallot halves alternatingly on wooden skewers. Cook over a hot grill for 10-15 minutes, until meat is cooked through.

Mix peanut butter with chutney, oil and curry paste. Serve skewers with dipping sauce,
