For the dough
300 grams Pastry flour
1 pinch salt
1 egg
50 grams butter
150 grams Lard
butter (for greasing)
50 grams light Sesame seeds
For the filling
250 grams Chicken breasts
2 red onions
2 Tbsps butter
60 grams lingonberry (from a jar)
120 milliliters dry Red wine
salt
freshly ground peppers
4 sheets Radicchio

Preparation steps

For the dough, mix flour and salt. Form into a mound on a flat work surface, make a well in center and crack egg into well. Cut lard along with butter around well and knead quickly into a smooth dough. Shape into a ball, wrap in plastic wrap and refrigerate for 30 minutes. Preheat oven to 180°C (approximately 350°F) and grease mini-muffin cups with butter and sprinkle with sesame seeds.

Divide dough into 12 portions. Quickly roll out and line mini-muffin wells. Bake in oven until golden brown, or about 15 minutes. Remove, cool and carefully remove. For the filling, rinse chicken, pat dry and cut into small pieces. Peel onions, cut in half and finely dice.

Add meat to a hot frying pan with melted butter and cook. Add onion, pour in berries and deglaze with red wine. Simmer briefly and season with salt and pepper. Rinse radicchio, spin dry and pluck as needed. Fill pastry cups with chicken mixture and garnish with radicchio to serve.
