2 cups small new Potato (cooked the day before)
2 ¼ cups String bean
1 Tbsp freshly chopped parsley
1 Tbsp freshly chopped Basil
2 small Chicken breasts
salt

4 Tbsps olive oil
0.333 cup Parmesan (whole)

Preparation steps

1.
Wash and trim the beans and cut in half diagonally. Blanch in boiling, salted water for about 10 minutes, drain, place in cold water, then leave to drain.

Season the chicken breasts with salt and pepper. Fry in 1 tablespoon of oil for about 5 minutes on each side, then remove from the skillet. Cut diagonally into strips and keep warm.
3.
Cook the penne in boiling, salted water until al dente. Cut the potatoes in half and fry together with the beans in the remaining olive oil. Season with salt and pepper. Drain the penne, mix in the potatoes and string beans and stir in the basil and parsley. Place some chicken strips on the top.
4.
Arrange onto plates, grate some parmesan cheese over the top and serve.
