Chicken and Pear Salad with Blue Cheese
Rinse the chicken breasts, pat dry, and season with salt and pepper. In 2 tablespoons hot oil sauté on both sides over moderate heat for about 8 minutes. Stir frequently.
To make the dressing, mix lemon juice, vinegar, sugar, and salt.
Rinse and dry the lettuce. Cut it into wide strips and arrange on plates.
Rinse and pears and pat dry. Then core them, cut into quarters, and then into thin slices. Place on the salad and crumble the cheese over everything. Cut chicken breasts into strips and place on top. Drizzle on the dressing to serve.
