- 2 large, skinless Chicken breasts (sliced)
- ⅓ cup extra virgin olive oil
- 2 Tbsps white wine vinegar
- 2 large Oranges (segmented)
- 1 head Radicchio (roughly chopped)
- 1 Red onion (finely sliced)
- flat-leaf parsley (chopped)
- salt
- freshly ground Black pepper

Preparation steps

Heat the oil in a large frying pan set over a moderate heat until hot.

Season the chicken with salt and pepper, and fry for 8 - 10 minutes, turning occasionally, until golden and cooked through.

Meanwhile, whisk together the oil, vinegar, and seasoning in a mixing bowl to make a quick dressing.
4.
Add the orange, radicchio, onion, and parsley, tossing well to coat. Once the chicken is cooked, add it to the bowl and toss with the other ingredients.
5.
Lift onto plates and serve.
