- 2 Chicken breasts (cooked)
- 4 cups mixed salad
- 1 Orange (peeled)
- 2 Tbsps extra-virgin olive oil
- ½ Lime (juiced)
- salt

- pomegranates
- ⅔ cup Cherries (stoned)

Preparation steps
1.
Shred or chop the chicken and place in a serving bowl with the salad leaves.
2.
Segment the orange over a bowl to catch the juice, placing the segments in the serving bowl. Squeeze out any excess juice from the pith.
3.
Whisk in the oil and a little lime juice and seasoning, then toss the salad with the dressing.
4.
Hold the pomegranate over the bowl cut side down and bash with a wooden spoon to release the seeds. Dot the cherries around and serve.
