Cherry Parfait with Brownies

Cherries and yogurt both provide nutrients that have a lot of health benefits. Cherries are full of vitamins and minerals while yogurt contains a lot of protein. The brownies are the only part of this recipe that is not glowing with healthy components, but it is always important to keep a balanced diet and treat yourself every once in a while.
If you don't want to eat that much sugar, you can omit the brownies and just eat the cherries and yogurt. You can also substitute other fruits for the cherries.
Ingredients
- For the parfait
- 1 egg white
- 2 Tbsps Vanilla sugar
- 3 Tbsps powdered sugar
- 7 ozs Yogurt (0.1% fat)
- 7 ozs cream cheese
- 3 ½ ozs Whipped cream
- For the cherry sauce
- 9 ozs Sour cherry
- 4 ozs Cherry juice
- 10 ozs Brownies
Preparation steps
For the parfait, beat egg white and heavy cream separately, each until stiff. Add vanilla sugar, powdered sugar and yogurt to cream and beat together. Stir cream mixture and egg whites together. Cover bowl and freeze at least 4 hours.
For the cherry sauce, rinse cherries, remove pits and set 4 cherries aside. Simmer cherries and cherry juice for about 10 minutes, remove from heat and let cool.
Remove parfait mixture from the freezer 5 to 10 minutes before serving and allow to thaw.
Scoop balls of parfait mixture and layer in glasses with diced brownies and cherry sauce. Garnish with reserved cherries.
