100 grams Cherries (pitted)
200 milliliters Cabbage
1 Tbsp cornstarch
2 eggs
200 milliliters milk
3 Tbsps Maple syrup
100 grams Pastry flour
1 Tbsp cocoa powder
butter (for the pan)
200 grams Whipped cream
1 Tbsp sugar

Preparation steps

1.

Combine the cornstarch with several tablespoons of the cherry juice and mix until smooth. Boil the remaining juice and stir in the cornstarch mixture. Remove from the heat and stir in the cherries.

Beat the eggs, milk and maple syrup together, then stir in the flour and cocoa powder. Let the batter rest for about 20 minutes.

Pour 1/8 of the batter into hot frying pan greased with butter. Tilt the pan with a circular motion to spread the batter evenly. Cook the crepe on both sides, remove from the pan and keep warm in the oven. Repeat this process until you have 8 crepes.

4.

Beat the heavy cream with sugar until stiff, then put into a piping bag with a star tip big.

5.

Fold crepes in half twice, place two crepes each on warmed plates, top with the cherries in the cherry sauce and garnish with whipped cream rosettes.
