4 cups macaroni
cup butter
2 Tbsps all-purpose flour
1 ⅔ cups milk
1 ⅔ cups double cream
2 Tbsps grainy Mustard
1 cup Cheddar cheese (grated)

Preparation steps

Cook the macaroni in boiling salted water until al dente, then drain.

Melt the butter in a saucepan and stir in the flour, then gradually stir in the milk to form a smooth sauce. Cook over a low heat until the sauce bubbles, stirring constantly to eliminate any lumps. Stir in the double cream and mustard and bring back to a simmer, then mix in three quarters of the cheese and the drained pasta.

Spoon into a baking dish and sprinkle over the remaining cheese. Cook under a hot grill for 8 - 10 minutes or until the cheese on top is golden brown and bubbling.
