Cheesy Chicken Quesadillas

Wash, halve, core and dice the bell pepper.
Wash and drain the beans.
Wash and dice the chicken breasts.
Wash and trim the scallions and cut into rings. Mix with the beans, bell pepper and chicken.
Lay two tortillas on a cookie sheet lined with baking parchment and scatter with half of the cheese. Divide the mixed chicken and vegetables between the two tortillas, season with salt and pepper and finish off with the rest of the cheese. Put another tortilla on top of each and press lightly. Bake in a preheated oven (160°C/320°F) for 20-25 minutes. Halve the quesadillas and serve.
