150 grams Ricotta cheese
50 grams Parmesan
1 butter
30 grams Parmesan (for sprinkling)

Preparation steps

1.

For the blintzes: Place the flour in a bowl then whisk in the milk and eggs. Season with a pinch of salt. Add the melted butter. 

2.

In a medium frying pan, heat a little butter and cook thin blintzes until golden brown on both sides. Let cool.

Meanwhile, for the béchamel: Melt the butter in a saucepan, add the flour and cook until light golden brown. Gradually whisk in the milk and boil for 5 minutes. Season with salt, pepper and nutmeg.

For the filling: Finely dice the ham and mozzarella. Strain the ricotta through a sieve and mix with the béchamel. Mix in the ham, mozzarella and grated Parmesan and season with salt and pepper.

Preheat the oven to 220°C (approximately 425°F).

Spread the filling over the blintzes and roll up. Grease a shallow baking dish and add the blintzes, seam-side down. Sprinkle with grated Parmesan and flaked butter. Bake until golden brown.
