Cheesecake with Strawberries
Line baking pan with parchment paper.
Crumble biscuits finely and mix with butter. Spread evenly on the bottom of the pan and smooth.
Rinse limes in hot water, grte zest and squeeze juice. Combine both with ricotta, sugar, vanilla sugar, eggs and cornstarch, whisk until smooth. Spread on the base and smooth. Place cake pan into a deep baking pan and fill it with about 2 cm (approximately 3/4 inch) water. Bake in preheated oven at 160°C (approximately 325°F) for about 1 hour.
Remove from the oven and the pan. Cool and refrigerate for at least 3 hours.
Before serving, cut into pieces and garnish with strawberry halves. Serve.
