50 grams streaky, smoked Bacon
150 grams medium-aged Gouda
250 grams Pastry flour
2 tsps Baking powder
baking soda
Salt and freshly ground pepper
2 eggs (medium)
100 grams softened butter
250 grams Kefir

Preparation steps

1.

Dice bacon very finely and cook until crisp in a frying pan. Drain on paper towels. Shred the gouda.

Mix flour with baking powder, baking soda and salt and pepper to taste. Beat the eggs in a second bowl. Stir in butter and kefir and mix well. Fold in flour mixture. Fold in bacon and cheese.

3.

Grease a muffin tin or line the wells with paper baking cups. Fill wells with the batter. Bake in a preheated oven at 175°C (gas mark 2-3, fan: 160°C) (approximately 350°F/convection 325°F) for 35-40 minutes.
