- 500 grams Pastry flour
- 100 grams Stinging nettle
- 3 bunches parsley
- 5 eggs
- 2 egg yolks
- 400 grams onions
- 70 grams butter
- 300 grams Emmentaler cheese
- salt
Preparation steps
1.
Rinse herbs, mince and mix with flour, eggs, salt and egg yolk to form a dough. Cover dough and let rise for 30 minutes. Peel onions and slice into thin rings.

Cut cheese into small cubes. Melt butter and cook onions over low heat while, stirring constantly until golden.
Bring a pot of salted water to a boil. Shape dough into dumplings and cook in saltwater.

Remove dumplings with a slotted spoon remove as soon as they rise to the surface. Place some dumplings in a bowl, then add a layer of cheese and top with more dumplings. Serve garnished with onions.
