- 2 handfuls Spinach
- 1 handful Basil
- 1 handful parsley
- salt
- 200 grams Ricotta cheese
- 1 generous pinch organic lemon zest
- 50 grams freshly grated Parmesan
- 2 eggs
- 1 egg yolk
- 250 Pastry flour
- peppers
- Nutmeg
- Pastry flour (to work)
- 2 Tbsps olive oil
- planed Parmesan (to sprinkle)

Preparation steps

Rinse the spinach, basil and parsley. Remove the tough stems and blanch in boiling salt water. Rinse in cold water and drain well. Coarsely chop. Knead the spinach, basil, parsley, ricotta, lemon zest, parmesan, eggs, egg yolk and flour into a smooth dough. Season with salt, pepper and nutmeg.
Use a spoon to portion out heaps of the dough. Place the heaps on a floured work surface. Simmer in salt water for about 8 minutes, but do not boil. (If the dumplings fall apart, knead flour or egg into the dough.)

Remove the dumplings from the water and drain. Drizzle with oil. Serve sprinkled with parmesan.
