For the dough
250 grams Pastry flour
1 tsp salt
2 eggs
1 Tbsp olive oil
Pastry flour (for the work surface)
For the filling
500 grams Cottage cheese
3 Tbsps breadcrumbs
4 Tbsps chopped parsley
2 Tbsps scallions
1 egg
salt
peppers (from the mill)

Preparation steps

1.

For the dough: Mix the flour with the egg, salt and olive oil. Knead well, cover with a cloth and let it rest for about 30 minutes.

For the filling: In a bowl, stir together the cottage cheese, breadcrumbs, herbs and egg. Season with salt and pepper.

To assemble: Put the dough on a lightly floured work surface and, with a rolling pin, roll out as thin as possible (with the pasta machine to roll setting 6). Cut the dough into squares, each cut about 8 cm (approximately 3 inches) in length and place a teaspoon of filling in the center of each square. Fold the dough over into a triangle and press down well to make sure the edges are sealed.

Cook the dumplings in a pot of boiling salted water for about 10 minutes. Remove and drain well.

5.

Melt the butter in a large frying pan and fry the dumplings for 2 to 3 minutes. Serve garnished with chives.
