300 grams fresh Arctic Char (skinless)
10 grams fresh ginger
2 fresh Limes
1 dried chili pepper
½ tsp black peppercorns
4 Tbsps vegetable oil
3 Apple (such as Granny Smith)
salt

8 sheets Radicchio
4 sheets Baby spinach
1 carrot

Preparation steps

1.

Rinse fish, pat dry and place in a shallow dish. Peel ginger and grate finely. Rinse limes in hot water, grate zest and squeeze out juice. Crush chile pepper and peppercorns in a mortar. Mix peppers with 2 tablespoons of oil, ginger and about 6 tablespoons of lime juice. Coat fish with marinade and refrigerate, covered, for at least  2 hours.

Rinse apples, core and grate finely. Mix with remaining lime juice.

Arrange grated apple on plates, drizzle with remaining oil. Cut fish fillets with a very sharp knife into thin slices, season with a little salt and place on top of apples. Cut carrot lengthwise into thin slices and cut into thin strips. Serve decorated with carrot strips. Garnish with radicchio and spinach, if desired.
