100 Silken tofu
2 Tbsps Crème fraiche
½ tsp Wasabi paste
Lime juice
light soy sauce
For the Tartare
2 scallions
400 grams Arctic Char (ready to cook, skinless)
1 tsp freshly grated ginger
2 Tbsps Sesame seeds (toasted)
2 Tbsps grapeseed oil
½ tsp sesame oil (dark)
Lime juice
salt
peppers ( freshly ground)

Preparation steps

1.

Prepare sauce by combining tofu with creme fraîche. Puree. Season with wasabi, lime juice and soy sauce.

2.

For tartare, rinse scallions, shake dry and cut into thin rings. Rinse char, pat dry and finely chop. Mix with scallions, ginger, sesame oil, grapeseed oil, sesame oil adn lime juice. Season with salt and pepper.

3.

Arrange tartare on a plate using a mold ring, drizzle with sauce.

4.

Can be served with a radish salad.
