- 1 tsp Lemon peel
- 2 Tbsps lemon juice
- 200 grams Sour cream
- 1 Apple
- 1 scallion
- salt
- freshly ground peppers
- ½ tsp Curry powder
- 500 grams Celery root
- 1 potato
- 50 grams Walnut
- 2 eggs
- 3 Tbsps Pastry flour
- clarified butter (for frying)
Preparation steps
1.
Mix the sour cream with lemon juice. Cut the apple into quarters, peel, core and grate. Rinse and trim the scallions and cut into thin rings. Mix the apple and scallions with the sour cream, season with salt, pepper and curry powder.

Peel the celeriac (celery root) and grate coarsely. Peel, rinse and finely grate the potato. Mix the celery root, potatoes and walnuts with eggs, flour, and lemon zest and season with salt and pepper. Heat some clarified butter in a pan, place tablespoons of the batter in the butter and flatten slightly. Fry on each side over medium heat for 3 minutes, until golden brown. Serve immediately with apple sour cream.
