Preparation steps

Rinse and trim the celery and cut into pieces. Set some of the greenery aside for garnish. Rinse and quarter the apples and remove the cores. Cut half an apple into thin columns and the rest into small cubes. Peel and halve the pineapples, remove the hard stalks and cut one-half into thin slices. Cut the rest into small cubes. Rinse and trim the scallions and cut into rings.

Toast the pine nuts in a dry skillet until golden brown.

Mix the honey with the lemon juice, 2-3 tablespoons water and the oil and season with salt. Mix into the diced mix fruits and vegetables.

Divide between bowls and garnish with apple slices, pineapple slices and celery leaves. Serve showered with the pine nuts.
