- For the dressing
- ½ cup coconut milk yogurt
- 1 Tbsp fat-free Mayonnaise
- 1 Tbsp lemon juice (from one lemon)
- For the salad
- 4 small, skinless Chicken breasts
- 1 ½ Tbsps olive oil
- 1 large gala Apple (cored and cut into thin strips)
- 1 large gala Apple (cored and cut into thin strips)
- 4 sticks Celery (with leaves)
- ½ cup Walnut
- salt
- freshly ground Black pepper

Preparation steps
1.
For the dressing: Whisk together the yoghurt, mayonnaise, lemon juice, and seasoning in a large mixing bowl. Cover and chill until needed.
2.
For the salad: Preheat the grill to hot. Drizzle the chicken with the oil and season with salt and pepper.

Arrange on a grilling tray and grill for 14 - 18 minutes, turning occasionally, until golden and cooked through.
4.
Remove from the grill and leave to rest for 5 minutes. Cut into strips and add to the bowl of dressing along with the apples, celery, celery leaves, walnuts, and seasoning.
5.
Toss and stir well until coated. Spoon onto plates and serve.
