- 1 Cedar board (for grilling)
- 4 Salmon steak
- 2 Tbsps olive oil
- 1 Tbsp fresh lemon juice
- 1 tsp freshly ground Black pepper
- salt (to taste)
- For Orange Salsa
- 1 Tbsp fresh lemon juice
- ½ Tbsp honey
- 1 naval Orange (peeled; pith removed and sectioned)
- 2 Tbsps chopped, red Bell pepper
- 1 scallion (chopped)
- 1 small Jalapeño (pepper)
- 1 Tbsp fresh cilantro (finely chopped)
- 1 pinch salt

Preparation steps

Immerse and soak the plank in salted water for at least 1 hour or overnight; drain.

Prepare the grill for indirect grilling and heat to medium-high.

Rinse the salmon steaks under cold running water and pat completely dry with paper towels. Combine the olive oil and lemon juice and lightly brush both sides of the salmon steaks. Generously season both sides with salt and pepper. Lay the salmon steaks on the prepared plank.

Place the cedar plank in the center of the prepared grill grate, away from the heat. Cover the grill and cook until cooked through, around 15 to 25 minutes, or until the salmon flakes easily or until desired degree of doneness. Check the plank occasionally and mist with water if edges start to catch fire.

For Orange Salsa:

Meanwhile, combine lemon juice and honey in a small bowl and stir well. Add orange sections, red pepper, scallion, jalapeno, cilantro and salt. Gently stir to thoroughly combine.

Transfer salmon to individual plates and top with orange salsa. Serve.
