500 grams Snow peas
1 Red Bell pepper
salt
freshly ground peppers
80 grams Truffle butter (from a jar)
100 grams pecorino romano (grated)

Preparation steps

1.

Rinse snow peas and halve diagonally. Rinse and halve bell pepper, remove seeds and ribs and cut crosswise into strips.

2.

Blanch vegetables in boiling salted water for about 2 minutes. Drain and rinse in cold water, drain again. 

3.

Melt truffle butter. Place vegetables into raclette pan, season with salt and pepper, drizzle with some truffle butter and sprinkle with cheese. Roast under a hot broiler for about 6-8 minites or until cheese is melted, watching carefully. Remove from the oven and serve.
