Rinse, peel and slice carrots. Heat 2 tablespoons of oil in a pan, saute carrots for 5-6 minutes, Peel garlic and chop finely. Add to carrots and saute together for 2 minutes.
Combine vinegar, remaining oil, curry powder, garam masala. Season with salt and pepper.
Toss carrots with dressing, add parsely and serve.
