- 50 grams almonds (peeled)
- 100 grams fresh Carrots greens
- 2 garlic cloves
- 75 grams Parmesan
- 150 milliliters olive oil
- salt
- freshly ground peppers

Preparation steps
1.
Toast the almonds in a dry pan until golden brown. Remove from the pan and let cool. Rinse and dry the carrot greens, then coarsely chop. Peel the garlic, and finely grate the parmesan cheese.
2.
Puree the carrot greens, almonds, and garlic in a food processor. Gradually incorporate the olive oil until a thick pesto has formed.
3.
Stir in the parmesan cheese, and season to taste with salt and pepper.
