Carpaccio of Grapefruit with Asparagus
Grapefruit is full of vitamin C, a vitamin that boosts the immune system. Eating this along with the other nutrients can help your body fight infections.
You can also add a bit of yogurt on top or some chopped nuts for more protein, fats, and calcium.
With a sharp knife, cut off peel and white pith from grapefruit. Cut fruit into thin slices. Arrange slices in a fan pattern on four plates. Mix honey with orange juice brush mixture on grapefruit. Peel bottom thirds of asparagus and slice stalks diagonally.
Fry asparagus briefly in hot oil. Season with salt and peppercorns. Add a little water. Cover and simmer until asparagus is al dente, 2-3 minutes. Arrange asparagus over grapefruit and serve garnished with lemon balm.
