1 smaller Green cabbage (500 grams)
125 milliliters Vegetable broth (Instant powdered)
2 Tbsps White vinegar
1 Tbsp vegetable oil
salt
freshly ground peppers
100 grams Yogurt (0.1% fat)
1 Apple
200 grams green Grape
1 Tbsp toasted Sunflower seed

Preparation steps

Rinse and quarter cabbage lengthwise. Remove core and cut quarters crosswise into thin strips. Sprinkle with 1 teaspoon salt, mix well and let stand about an 1 hour.

Heat vegetable stock in a pot and mix with vinegar and oil. Season with pepper and pour mixture over cabbage. Mix well and marinate about 30 minutes. Drain cabbage in a sieve, then transfer to a bowl. Stir in yogurt and season generously with salt and pepper. Rinse, quarter and remove core from apple. Cut apple into thin slices. Rinse grapes and pat dry. Mix apple slices, grapes and sunflower seeds into the salad.
