For the burgers: Soak stale bread in water. Peel onion, chop finely and fry in butter until translucent. Mix ground beef with squeezed and pulled apart bread, onions, eggs and breadcrumbs and season with mustard, paprika, salt and pepper. Knead meat mixture, adding extra breadcrumbs if needed.
Rinse and slice tomatoes. Rinse lettuce leaves and shake dry. Drain pineapple and fry in a grill pan with 2 tablespoons clarified butter until lightly brown.
Peel and halve shallots and cut into slices.
Fry eggs in remaining butter and season with salt and pepper.
Cut burger buns and roast in oven at 200°C (approximately 400°F) until golden brown.
Use wet hands to form 4 patties from meat mixture and fry in hot clarified butter for 2-3 minutes on each side.
When burgers are cooked, fry shallots in pan grease with a little butter until brown.
Place a burger on each bottom bun and top each with a lettuce leaf, beetroot slices, a slice of tomato, two grilled pineapple slices, shallots and a fried egg. Cover with top burger bun and serve with freshly cooked french fries.
