Ingredients

For the dough
65 grams sugar
100 grams butter
160 grams Pastry flour
30 grams ground almonds
1 egg
1 pinch salt
Pastry flour (for the work surface)
Also:
100 grams Marzipan
100 grams powdered sugar
Food coloring
30 grams Milk chocolate couveture
Sugar pearls

Preparation steps

1.

For the dough: Combine egg, butter and salt. Knead in sugar, flour and almonds. Shape dough into a flat rectangle. Wrap with plastic and chill for 30 minutes.

Put dough on a floured surface and roll out to about ½ cm (approximately 1/6 inch) thick. Cut out 4 large rabbits.

Place rabbits on a baking sheet lined with parchment paper and bake in an oven preheated to 180°C (approximately 350°F) for 10 -12 minutes.

Remove and let cool on a wire rack.

Stir together 3 tablespoons powdered sugar and 1 teaspoon water until smooth. Dye with food coloring. Use to decorate rabbit, as desired.

Knead marzipan with powdered sugar. Dye with a few drops of food coloring. Thinly roll out marzipan and cut out 4 equal rectangles. Press onto rabbits to form skirts. 

6.

Coarsely chop chocolate and melt over a double boiler. Pour melted chocolate into a piping bag and use to draw rabbit faces. Decorate with sprinkles, let set and serve.
