Ginger Sugar Cookies
Preheat the oven to 170°C (150° fan) 325°F gas 3. Line 2 large baking trays with non-stick baking paper.
Sift the flour, bicarbonate of soda and spices into a bowl. Set aside.
Beat the butter and half the sugar in a mixing bowl until soft and creamy. Beat in the egg.
Stir in the syrup and lemon juice, then stir in the flour mixture to form a soft dough.
Roll the dough into 2 cm | 1" balls and roll in the remaining sugar to coat. Place well apart on the baking trays.
Bake for about 12 minutes until firm and golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
