- ⅓ cup sugar
- 2 tsps Vanilla sugar
- ¾ cup chilled unsalted butter (in chunks)
- 1 cup pink sugar (scant)

Preparation steps

Mix the flour with the sugar and vanilla sugar and form into a mound on the work surface. Dot the butter around the edge and chop the mixture together, using a dough scraper or large knife, until it resembles breadcrumbs. Knead quickly by hand to form a smooth dough. Wrap in cling film and rest in the refrigerator for around 1 hour.

Heat the oven to 180°C (160°C in a fan oven), 375°F, gas 5 and line a baking tray with grease-proof paper.

Scatter the pink sugar over a board. Divide the dough into 2 or 3 pieces and form each into a sausage shape with a diameter of around 4 cm. Roll the sausages in the pink sugar until coated.

Using a sharp knife, cut the dough into thin slices and place these on the baking tray. Bake in the oven for 8-10 minutes until pale golden.
5.
Cool on a wire rack and store in an air-tight container.
