7 ozs whole spelt flour
1 ¾ ozs ground hazelnuts
5 Tbsps whole cane sugar
1 Vanilla bean
½ organic lemon
1 pinch salt
1 egg
4 ½ ozs butter
45 whole Hazelnuts (2 ounce)

1 Rolling pin, 2 Cookie cutters in bunny and sheep shape

Preparation steps

1.

Mix flour, ground hazelnuts and whole cane sugar. Slit the vanilla bean lengthwise and scrape out the pulp.

2.

Add vanilla pulp, lemon zest, salt, egg and butter in pieces to the flour mixture. Knead everything quickly into a smooth shortcrust pastry. Wrap in plastic wrap and chill for approx. 30 minutes.

3.

Roll out dough on a floured work surface and cut out rabbits or lambs. For each Easter bunny, place a hazelnut as a tail and press down gently.

4.

Place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 180 °C / 350 ˚F for 10-15 minutes. Remove and allow to cool.
