Buckwheat Pancakes with Salmon
Buckwheat is a great source of protein and fiber while salmon is rich in protein and heart-healthy omega-3 fatty acids.
These pancakes are delicious with some creme fraiche.
- For the blinis
- 2 eggs (separated)
- ⅔ cup Whole wheat flour
- ⅔ cup whole-grain Buckwheat flour
- 2 tablespoons Yeast
- 1 ⅛ cups lukewarm milk
- 2 tablespoons melted butter
- 4 tablespoons clarified butter
Heat a little clarified butter in a pan and place blobs of batter into the fat using a dessert spoon. Fry on both sides in batches for around 1-2 minutes. Drain on some kitchen roll and keep warm in the oven at 175°F.
