- For the blinis
- 2
eggs (separated)
- ⅔ cup
- ⅔ cup
whole-grain Buckwheat flour
- 2 tablespoons
- 1 ⅛ cups
lukewarm milk
- 2 tablespoons
melted butter
- 4 tablespoons
clarified butter
Preparation steps
1.
Put the egg whites in the fridge to chill.

Mix the two flours together. Dissolve the yeast in the milk and stir in the melted butter, egg yolks and a pinch of salt. If the batter is too thick or too runny, alter the amount of milk slightly. Cover and leave to work in a warm place for around 20 minutes.

Just before frying, whisk the egg whites until stiff and fold into the batter.

Heat a little clarified butter in a pan and place blobs of batter into the fat using a dessert spoon. Fry on both sides in batches for around 1-2 minutes. Drain on some kitchen roll and keep warm in the oven at 175°F.
5.
Mix together the onion and sour cream. Add the chives and season to taste with salt and ground black pepper. Spoon onto the blinis and top with the caviar.
