- 4 leaves Endive
- 2 Tbsps Mayonnaise
- 1 Tbsp Sour cream
- 1 generous pinch medium-hot Mustard
- 1 tsp lemon juice
- salt
- white peppers
- sugar
- 4 Scallop (without roe)
- Pastry flour (for dredging)
- 1 egg
- fine breadcrumbs (for breading)
- vegetable oil (for frying)
Preparation steps

Rinse endive leaves and spin dry. Whisk mayonnaise with crème fraiche, mustard and lemon juice. Season with salt, pepper and sugar. Rinse scallops and pat dry. Whisk egg. Dredge scallops in flour and tap to remove excess. Dip scallops in beaten egg and finally coat on all sides in breadcrumbs.

Fry scallops in hot oil until golden-brown. Cut endive leaves lengthwise into strips and divide among small plates. Drizzle endives with dressing. Halve scallops and place 2 halves on top of each salad.
