Preheat the oven's broiler. Rinse the scallops and pat dry. and pat dry the scallops. Peel the garlic, chop finely and sauté in the olive oil until softened. Add the lemon juice, parsley and scallops to the pan. Increase the heat and cook until the scallops are opaque.
Arrange the scallop shells on a baking sheet lined with parchment paper. Place the scallops onto the shells and spoon the lemon juice mixture over them. Toss the breadcrumbs with the grated parmesan and sprinkle over the scallops. Top with butter flakes or a drizzle of olive oil. Place under the broiler for about 2 minutes, until the breadcrumbs are golden brown and the cheese has melted. Remove from the oven and serve immediately.
