- 150 grams Goose fat
- 3 bay leaves
- 4 Juniper berries
- 2 sprigs fresh thyme
- 1 tart Apple
- 2 onions
- salt
- freshly ground peppers
- Baguette (for serving)
- Gewürzgürkchen (for serving)

Preparation steps
1.
Cut meat into small cubes. Place goose fat and meat in a roasting pan. Cover and bake about three hours at 100°C (approximately 210°F). Peel apples and onions and cut into quarters. Mix apples and onions with spices and add to the meat. Continue to bake another 60 minutes in the oven.

Transfer the meat to a sieve; let fat drain off. With a fork, shred meat. Bring meat and fat to a boil again briefly. Pour spread (rilettes) into small ramekins and refrigerate until set, or overnight. Serve rilettes with baguette and gherkins.
