Bran Raisin Muffins
Heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 6 muffin tins.
Put all the dry ingredients, except the sultanas into a mixing bowl and stir to combine.
Whisk together the egg, honey, oil, milk and vanilla until blended. Stir into the dry ingredients until just combined. If the mixture is too stiff, add a little more milk. Stir in the sultanas.
Spoon into the paper cases and bake for 20-25 minutes until risen and golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
